Creamy chicken and wild rice casserole
Serves 6 people
Ingredients:
- 3 cups cooked, chopped chicken breasts
- 2 cups cooked wild rice
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 3 tablespoons flour
- 1 cup chicken broth
- 1/2 cup milk
- Salt and freshly ground black pepper to taste
- 1/2 cup shaved Parmesan cheese
Directions:
- Preheat the oven to 350 degrees F and grease a medium casserole dish. Evenly arrange chicken and rice in the casserole dish.
- In a small saucepan over medium-high heat, heat the oil and cook the onion, stirring often, for about two minutes. Sprinkle in the flour and cook, stirring, for about one minute; whisk in the broth and bring to a simmer.
- Whisk in the milk and bring back to a simmer; season with salt and pepper. When the sauce just thickens, pour it over the chicken and rice, shaking the dish to evenly distribute the ingredients.
- Sprinkle with cheese and bake for 25 minutes or until lightly browned.
